Wedding Cake Filling?
A friend of mine is making my wedding cake. She will use white box mix and make a buttercream icing. I would like a chocolate filling. Is chocolate buttercream filling a good choice? If so, is there a recipe one can share? If it's not a good choice are there any recommendations for a chocolate filling? She is not a professional baker but has made a couple of wedding cakes. If I could buy a filling from a bakery that would be great. Wonder if that's a possibility? I am trying to keep things simple for her.

- i would say maybe a rasberry jam filling would be better then the chocolate buttercream where you already have a buttercream frosting.
- She can make a very simple chocolate ganache and that will be great for a cake filling. The problem is chocolate filling is hard to ice around with pale icing.
Also, I have to tell you the Betty Crocker icing in the plastic tubs has really good chocolate icing that can be used as a filling.

I have no idea where your located... BUT look for a bakery supply store.. or a cake decorating etc company that retails things from wiltons... You can get an amazing chocolate pudding type filling ... here in the Great GR area of Michigan it's about 7 bucks a bag.. The bag will fill up to an 18 inch square/round cake.....
OR go to wilton's on line to see if you can order direct...

- sure, you can buy the cake in pieces if you want at the bakery, they're a business and would be happy to sell the filling only. They probably will let you taste the different fillings also to help you make up your mind. Congratulations on your wedding.
- Try a chocolate ganache. It is semi-sweet chocolate and heavy cream. 3 lbs. chocolate to 1 quart heavy cream. Bring the heavy cream to a boil (careful not to over boil)
pour heavy cream over the chocolate and stir till smooth. Refrigerate til cool and spreadable.
- Lemon curd would be a great filling. But if you want chocolate...and certainly at your own wedding you should have what you want...you should do chocolate. Try for a ganache filling AND frosting. She could decorate using whites and/or pastels on the chocolate frosted cake. Very pretty and unique for a wedding.
