Good luck and congrats
- If I were you, I would rethink the cake topper with the bride holding a key and the groom wearing a ball and chain. That stereotype denigrates women and denigrates marriage. I think that most people no longer find that type of thing humorous.
Good luck with your wedding. I think that you will be happy with the cupcake idea. It is a lot easier and less messy than cutting the cake.
- You could use the classic Martha cake, and substitute white chocolate shells on top of the cupcakes:

Scallop shells would look especially pretty

This is a good article on doing a cupcake tree:

The construction of the cupcake tree can be done in a couple of ways. Some companies actually make them out of pieces of cardboard that you assemble at home. These will run you about $20. The other option is to use graduated sizes of cake pedestals stacked on top of one another. If you don't have different sizes of cake plates, that's okay. Just stack the smaller ones toward the top. You can fill in the tree shape when you distribute your cupcakes on the plates.
Determine how many cupcakes you'll need for your party when you plan your cupcake tree out. Figure about 1 1/2 per guest. Extras are better than not having enough and having to look at a bare tree. The more you put on the plates, the fuller the tree will look. But don't crowd them to the point where they start bumping into one another and looking manhandled.
Decorating the cupcakes is like decorating your Christmas tree. Again, personal style is the key. Do you tend toward the simple white lights and a few strategically placed velvet bows, or are you an all-out "let's DECORATE this puppy!" with multi-colored blinking lights and heavy, heavy on the tinsel extravaganza-type? Experiment with sprinkles and dragees (those little sugar balls that come in different metallic-like coatings), with sugar paste flowers that you can buy at cake decorating supply stores, or even by creating simple plaids out of different colors of frosting.
Decorating all of the cupcakes the same way creates an elegant showpiece perfect for a sophisticated Christmas Eve dinner or New Year's Eve cocktail party; using multiple artistic techniques creates a homespun, more casual feel that's great for events with lots of kids or people who just like to beat to their own drums.
If you want, add a few bows or tinsel to the sides of your cupcake tree, but try not to make it look too busy. Or add a tree topper to the top pedestal to really give it that ultimate holiday look. Most of all, have fun decorating your new tree. And the best part is that you won't have to clean up all the pine needles you tramped through the house when you clean up!
Ditto on ditching the cake topper. This is your wedding day, and denegrating marriage and/or your spouse in any way, no matter how cute people think it is, is just not funny and in fact, kind of disrespectful. If you really want to use it, I think it would be better suited to a more informal shower.
- Grooms cakes arent meant to carry the theme of the wedding they are there to display what the grooms interests are.Like if he is into sports its a sports theme, motorcycles, fishing etc. The theory is that the wedding is the brides taste so the grooms cake is something soley for the groom to show off his likes and interests. I wouldnt do the topper you have with the key, I would have the cake reflect him.
As for your top, remember that the top layer isnt supposed to be cut at all, its to be taken home with you and saved for your first anniversary. You will probably just pose with the knife for your picture in a set up shot, you wont really cut your cake since its cupcakes.
- You'll need at least one cupcake per guest. I would probably make at least 175 just to be sure you have enough. Some people don't eat cake but there is at least one person who will eat like 6 cupcakes. I would advise against cutting the top layer. First, you are supposed to save the top layer. Second, there isn't enough support for you to be bearing down with a knife. Your whole tree may collapse if you try to cut the top layer. I would also rethink the topper. I have seen similar and you're right the bride and groom thought it was funny, but most of the guests did not. I was particularly offended by one that had the groom on all fours with a leash held by the bride. These aren't really funny. They send a bad message and many of your guests will find it to be in poor taste. You don't necessarily need a topper at all. You could just have flowers or seashells. Additionally, the groom's cake is for the groom. It should reflect his personality. You shouldn't have anything to do with it. Put him in charge of making/ordering it. Let him do whatever he wants. Don't worry about it. The worst thing that will happen is you won't have a groom's cake. If that happens then it really didn't mean that much to him. It won't ruin your wedding either way.
- You can either use the mini cake on top for cake cutting and freeze the rest of it for your anniversary. Or you can feed each other a cupcake and save the entire mini cake for your wedding. But you can't go wrong either way.
The grooms cake can be any color, flavor, or design. It does not have to match your theme; rather it should reflect your fiance's interests. I would ask your fiance what he prefers since the cake should be of interest to him as the groom.
I'd recommend having at least 1 1/2 cup cakes per guest. Not every guest will eat a cup cake, but some guests may have more than one. So I think 180 would be a good number to make.
