Chocolate Truffle Torte
Savor this rich chocolate torte. It’s a dessert classic—2 layers filled with rich chocolate goodness!
1 package (6 ounces) semisweet chocolate chips (1 cup)
1/2 cup butter or margarine
1/2 cup Gold Medal® all-purpose flour
4 eggs, separated
1/2 cup sugar
1 package (2 1/2 ounces) hazelnuts, finely chopped and toasted (2/3 cup)
Chocolate Truffle Filling (See Below)
Whole or chopped hazelnuts, if desired
1. Heat oven to 325ºF. Grease bottoms and sides of 2 round pans, 9x1 1/2 inches. Line bottoms of pans with waxed paper or cooking parchment paper.
2. Melt chocolate chips and butter in heavy 2-quart saucepan over medium heat, stirring constantly; cool 5 minutes. Stir in flour until smooth. Stir in egg yolks until well blended.
3. Beat egg whites in large bowl with electric mixer on high speed until foamy. Beat in sugar, 1 tablespoon at a time, until soft peaks form. Fold chocolate mixture into egg whites. Fold in toasted hazelnuts. Spread in pans.
4. Bake about 25 minutes or until tops of cakes appear dry and toothpick inserted in center comes out clean. Cool 5 minutes. Run knife along side of each cake to loosen; remove from pan to wire rack. Remove waxed paper. Cool completely.
5. Prepare Chocolate Truffle Filling. Spread 2/3 cup of the filling on bottom layer. Reserve 2 tablespoons filling. Top with other layer. Frost top and side of cake with remaining filling. Drizzle with 2 tablespoons reserved filling. (If filling is too thick to drizzle, microwave on High 5 to 10 seconds to soften.) Garnish with hazelnuts.

Flourless Chocolate Mousse Cake

- CHOCOLATE MOUSSE CHEESE CAKE
1 (11 oz.) pkg. Royal No Bake Cheese Cake
1 (9 5/8 oz.) pkg. Royal No Bake Chocolate Mousse Pie
1/2 c. butter, melted
3 tbsp. sugar
3 c. cold milk
Whipped topping
Grated semisweet chocolate
In a small bowl, combine crumb pouches from the cheese cake and chocolate mousse. Stir in butter and sugar. Press onto bottom of a 9 x 13 x 2 baking pan and chill.
In a small deep bowl, prepare cheesecake filling according to package directions using 1 1/2 cups milk. Spread on prepared crust and chill. Prepare chocolate mousse like above using 1 1/2 cups milk and spread over cheesecake filling. Chill for at least 2 hours. Garnish with whipped topping and grated chocolate.

Preheat the oven to 400 degrees F. Add instant coffee to melted butter. Set aside.
Beat the egg whites until stiff, set aside. Beat the egg yolks until lemon colored in an upright mixer. Add the sugar to the egg yolks and beat until combined. Add the brandy, vanilla, melted butter, and chocolate. Add the flour, just to combine. Fold in the egg whites and walnuts.
Pour into a greased and floured 9-inch springform pan and bake about 20 minutes. Center will be soft. Serve with whipped cream.
